Labaniye, Lebaniye, or Lebaniyeh is a Syriac–Aramean yogurt soup that you can add kibbe or kubbe to. For the recipe for kibbe, click here.
Ingredients:
- 1 liter homemade yoghurt
- 1 egg
- 1 tsp salt
- 2 dl whole wheat kernels
- 1 liter water
Instructions:
- Place the wheat kernels in soak overnight.
- Whisk yoghurt, salt, and egg in a saucepan.
- Add water and heat up while stirring.
- Put in the wheat kernels when the yoghurt mixture has boiled up. Let boil for approx. 40 minutes until the mixture thickens.
- Let boil while stirring.
- Place the saucepan in a cold water bath and stir until the wheat and yoghurt soup cools.
Tip: It is also fine to use plain yoghurt (3% fat content).
