Labaniye—Aramean Yoghurt Soup

Labaniye—Aramean Yoghurt Soup

Labaniye, Lebaniye, or Lebaniyeh is a Syriac–Aramean yogurt soup that you can add kibbe or kubbe to. For the recipe for kibbe, click here.

Ingredients:

  1. 1 liter homemade yoghurt
  2. 1 egg
  3. 1 tsp salt
  4. 2 dl whole wheat kernels
  5. 1 liter water

Instructions:

  1. Place the wheat kernels in soak overnight.
  2. Whisk yoghurt, salt, and egg in a saucepan.
  3. Add water and heat up while stirring.
  4. Put in the wheat kernels when the yoghurt mixture has boiled up. Let boil for approx. 40 minutes until the mixture thickens.
  5. Let boil while stirring.
  6. Place the saucepan in a cold water bath and stir until the wheat and yoghurt soup cools.

Tip: It is also fine to use plain yoghurt (3% fat content).
